Mmm, I love dipping...anything. French fries, grilled cheese, fake chicken strips, fondue! Oh the possibilities. But one of my favorite things to dip is chips. Simple, but classic. I like to take simple chips and salsa and add a little twist to it and make it slightly more exciting; although it is hard to improve upon perfection.
We recently had mexican night at our bible study and what's more mexican then corn chips with the perfect dips to complement, salsa and quacamole.
To make my very fresh tasting, chunky salsa:
2 medium tomatoes
1/2 medium onion
about a cup of fresh cilantro
^all roughly chopped and tossed into a bowl.
1 clove garlic
1/2 jalapeno pepper (optional)
^finely chopped and added to the bowl.
juice of one small lemon.
salt and pepper
^season to taste.
Mix all ingredients in a bowl and then strain out all the liquid. Return salsa to a nice serving bowl and toss with a light coating of olive oil. Mmmm, this salsa tastes so fresh and also has a little bit of bite from the jalapeno!
To make the guacamole:
2 ripe avacados - peeled
2 cloves garlic
1/2 medium onion
1/2 jalapeno pepper
juice from one small lemon
salt and pepper to taste
1/3 tsp ground cumin
^ mix all ingerdients in a food processor until you get the consistency you desire. I prefer mine to be very finely blended. You may prefer yours to be slightly chunky.
And to top it all off, we need the chips! My favorite are Tostitos Scoops. You get all the dip you love without the mess you hate! Perfect match! The best finger food for any gathering.
If you desire a spicier salsa or guacamole then leave the seeds in the jalapeno. For a slightly milder taste still with a kick, simply remove the seeds.
