I cooked today! It was so much fun! I miss cooking. What with being in Africa and living at my grandmas now..I don't get to do it all to often.
Tonight I was craving soup so started googling a few recipes when I came across one that totally caught my eye. Spicy African Yam Soup. It combines so many of my favorite things! Salsa, sweet potatoes, and peanut butter.
Here is what I used, slightly altered from the original recipe:
1 tsp vegetable oil
1 small onion - chopped finely
1 large sweet potato - peeled and diced
1 clove garlic - minced
^saute in a large soup pot until onion is soft
5-6 cups vegetable broth
1 tsp dried thyme
1/2 tsp dried cumin
^bring to a boil, cover and simmer 15 minutes
1 cup chunky salsa
1 19oz can chick peas - drained
1 large zuccini - diced
^stir into soup and let simmer until tender, about 15 minutes
1 cup cooked rice
2 tbsp creamy peanut butter
^stir into soup until peanut butter is completely dissolved
Serve with flax bread
It sounds totally weird. But it's so good! It should make enough for 5-6 good sized bowls. It's super chunky so it fills you up. And with awesome protein. I think this is a winning vegan meal. I will definitely make this again.
